Favorite Fall Inspired Salad : Hearty Arugula and Goat Cheese

I love that I am able to create me favorite fall salad during anytime of the year with a few ingredients.







Ingredients



Dressing

3 tablespoons extra virigin olive oil

2 tablespoons white wine vinegar

2 tablespoons basil leaves or powder

1/4 teaspoon sea salt

1/4 teaspoon sugar


Salad

3 beets medium size( red/golden) * optional

1 cup of chopped grilled chicken * optional

3 cups of arugula

1/4 cup of chopped walnuts

2 ounces goat cheese ( soft/crumbled)








Directions


Prepare the dressing by combining all the ingredients into one bowl and whisking for 4 mins. Place the dressing in the fridge until ready to be used.


Preheat oven to 400° F. Rinse beets and cut tops off if still attached. Wrap each in foil, leaving room for air to circulate. Place on a baking sheet and cook for about 50 minutes or until beets are tender when pierced with a sharp knife. Let cool, then slip off skins. Discard ends and slice beets 1/4-inch thick


Place arugula in a large bowl and toss half the dressing. Begin to layer the beets and chicken once that is complete drizzle the rest of the dressing. Top with the goat cheese, walnuts and a hint of pepper.
