Quick and Vegan Friendly Avocado Bean Salad Recipe







We are all looking for a quick recipe that transforms our tastebuds. This vegan avocado bean salad does just that. It is a combination of fresh ingredients that are light and refreshing.








Ingredients


  • 1 1/2 cup white beans

  • 1 avocados

  • 1 medium whole tomatoes

  • 1 cup of cooked corn

  • 1/4 medium onions or red onion

  • 1 1/2 tbsp olive oil

  • dash of salt

  • dash of pepper

  • sprinkle of garlic powder

  • 1/4 cup of fresh lemon juice

  • 1/2 cup of chopped cilantro









Directions

  • Chop onions; chop tomato; chop avocado; drain beans. Put all into a bowl.

  • Chop garlic and basil and place in a separate bowl along with lemon juice, salt, pepper, and olive oil, and whisk together well. Pour over salad base and mix well gently to combine.

  • Garnish with chopped cilantro. Can serve immediately, or refrigerate for a few hours before serving. Enjoy!
