
We are all looking for a quick recipe that transforms our tastebuds. This vegan avocado bean salad does just that. It is a combination of fresh ingredients that are light and refreshing.
Ingredients

1 1/2 cup white beans
1 avocados
1 medium whole tomatoes
1 cup of cooked corn
1/4 medium onions or red onion
1 1/2 tbsp olive oil
dash of salt
dash of pepper
sprinkle of garlic powder
1/4 cup of fresh lemon juice
1/2 cup of chopped cilantro

Directions
Chop onions; chop tomato; chop avocado; drain beans. Put all into a bowl.
Chop garlic and basil and place in a separate bowl along with lemon juice, salt, pepper, and olive oil, and whisk together well. Pour over salad base and mix well gently to combine.
Garnish with chopped cilantro. Can serve immediately, or refrigerate for a few hours before serving. Enjoy!
